Homemade Hummus

Shhh!!! Please don't tell Quinn that hummus is really a healthy food. We call it dip - as in chips and dip. The chips are tortilla chips and the dip is hummus. Yep, the stuff made out of chickpeas. If Quinn knew that, I'm certain that he would make his yucky face, cross his arms over his chest and refuse to eat it. But for now, he has no idea, so he loves "chips and dip".

It is so easy to make hummus. I followed this super simple recipe that I found on Pinterest.


Hummus

Ingredients:

  • 1 15-ounce can chickpeas, rinsed
  • 1clove garlic
  • 1⁄4cup olive oil
  • 2tablespoons fresh lemon juice
  • 2tablespoonstahini (sesame seed paste; optional)
  • 1teaspoonground cumin
  • kosher salt
  • 1⁄4teaspoonpaprika

Directions:

  1. In a food processor, puree the chickpeas and garlic with the olive oil, lemon juice, tahini (if using), cumin, and ¾ teaspoon salt until smooth and creamy. Add 1 to 2 tablespoons water as necessary to achieve the desired consistency.
  2. Transfer to a bowl. Drizzle with olive oil and sprinkle with the paprika before serving.

I skipped the tahini and used fresh lemon juice. I used a teaspoon of minced garlic from a jar instead of fresh garlic. And I also added a tiny bit of water that I had reserved when I drained the chickpeas to smooth out the consistency. All of the spices blended so well together and ittasted delicious! Quinn even gave it a resounding "this is good mom!" another Pinterest win. Yay!

I was in class for a little party so I got to take some photos to use on these pages. 🍭 I added the quote and tried to keep the color scheme focused on the turquoise and red to bring it together. I don't always have coordinating colors - and I'm totally fine with that. My MAIN FOCUS is documenting the MEMORIES - and sometimes the colors don't match. Oh well, that is life... I just roll with it.
